Sope Saturday

This week, I tried (for the first time) making my own beans.  It seems weird that I've never done this before, my mom makes them a lot, but buying canned has always seemed to work for me.  However, since one can of beans in Shanghai costs close to $3.00 and I could make 3 times as many for the same price, I gave it a try...I followed the directions on the package and they seemed to turn out.

At the same time I figured I might as well make some tortillas too (I do make these regularly - homemade are just way too tasty - and I have the added incentive that they cost $10 for a 10-12 pack!).

We had no kids at the dorm for most of the day today, so I decided it would be fun to have Sopes for lunch.  I absolutely love the sopes at La Cabañita where I used to live in Montrose, California and tried to recreate them as best I could from China.  They turned out pretty good - I was using a flour tortilla recipe though and think they'd be better with a corn/maize recipe.  In any case, we had no trouble making them disappear.

oh yummm! Please give me your recipe for flour tortillas - I want to try to make them too!!!!!

Oh Carrie, how I miss your cooking! These look amazing. I've been thinking of trying to make beans, too. I'm glad to see that yours turned out so well!

The recipe I use for flour tortillas is from my mom who got it from a friend many years ago ... I know there are tons on the internet to choose from, but I have always made these:

I often do a half or even quarter batch:
8 cups flour
3 cups warm water
1 1/2 Tablespoons salt
1/2 cup powdered milk (I usually just exchange 1/3 of the warm water for milk instead)
1 teaspoon baking powder
1/2 cup shortening (I use salted butter & decrease the salt)

Mix flour, salt, baking powder in bowl. Add shortening and work in until it resembles corn meal. Add warm water/milk and work until smooth (I add the last portion of the water after mixing a bit to make sure I don't overdo it & have to add more flour). Form dough into balls (a bit larger than a pingpong ball - larger if you want burrito size tortillas). Leave in covered bowl to "rest" for 15 minutes.

Heat cast iron skillet (if you have one) over medium (?) heat while you roll out on floured board until quite thin (mine are never perfectly round).

Once skillet is hot, put tortilla on it and let it cook until air pockets/bubbles start to form, then flip to the other side until cooked as you would like.
